What is O-Toro?

It is the fattiest portion of the tuna, found on the very underside of the fish. This cut is fatty almost to the point of falling apart and can literally melt in your mouth. O-Toro is generally the most expensive item on the menu by weight.

What is Certified Angus Beef?

The Certified Angus Beef brand ensures a high quality cut of beef that exceeds the USDA Select, Choice and even Prime grades of beef. Only 8% of all beef qualifies for this brand. Certified Angus Beef has more marbling which ensures a more tender, juicier and flavorful cut of meat.

What is Dry Aged Beef?

Starting with high-quality beef, the dry aging process is an expensive, time consuming process that takes special care and storage. This beef is aged for 7 to 21 days. During this process, a crust forms on the outside of the loin, capturing the juices. This layer is trimmed away, leaving steaks that are superior in tenderness and flavor. Dry aged steak is offered only in fine restaurants, upscale grocery stores and gourmet steak companies.

What are Day Boat Scallops?

It is common for scallop boats to harvest at sea for up to ten days. As a result, many scallops are over a week old when brought to market. Day boat scallops come from fisheries that only make daily harvesting trips, bringing their scallops to shore at the end of each day. These daily harvested scallops go directly to market, enabling us to provide you with the freshest scallops possible.

Wild caught shrimp are more pure as they are free of hormones and antibiotics that are commonly found in imported pond raised shrimp. The natural, firmer flesh of wild caught shrimp is more flavorful than the farm raised variety.
